This dip has a tiny kick of heat from the chilli, and the pinch of ground cumin really livens everything up, balancing out the tangy Greek yogurt perfectly. Together with heaps of red pepper and, of course, all that spinach, the flavours are amazing. I like to use frozen spinach for dips, as it gives a really nice, fine texture – so don’t worry if you don’t have a fridge full of fresh produce!
Ingredients
- 300 g frozen spinach
- 1 red pepper finely chopped
- 1/2 a mild red chilli finely chopped
- 3 tbsp Greek yogurt
- 30 g cheddar cheese grated
- 4 tbsp fresh parsley or coriander chopped
- Pinch of ground cumin
- Salt
- Black pepper

Instructions
- First, you need to defrost the frozen spinach. You can either add it to a frying pan over a fairly low heat, and cook until most of the water has evaporated, or you can microwave the frozen spinach and then thoroughly squeeze out as much of the water as possible.
