Ingredients
For the banana bread bottom
- 1/2 of an overripe banana
- 1/4 cup erythritol or sweetener of choice I prefer the confectioners variety, but any will work
- 1 large egg
- 1 egg yolk
- 4 tbsp of melted butter
- 1/2 tsp vanilla extract
- 1/4 cup plus 2 tbsp of almond flour
- 2 tbsp of flax meal
- dash of salt
- 1/2 tsp Baking Powder
For the cheesecake filling
- 8 oz cream cheese at room temp
- 1/4 cup erythritol or sweetener of choice again I prefer the confectioners
- 1 tsp vanilla
- 1/4 cup sour cream at room temp
- 1/4 cup Heavy Cream at room temp
- 1 egg

Instructions
For the banana bread bottom
- Preheat the oven to 350F and grease a 7 or 8" springform pan with non stick spray.
- In a large bowl, mash the banana with a fork then add in the melted butter, egg, egg yolk, and vanilla. Stir until well combined.
