Keto Banana Bread Bottom Cheesecake
This cheesecake is so delicious that you won't believe it is low carb and keto friendly!

Ingredients
For the banana bread bottom
  • 1/2 of an overripe banana
  • 1/4 cup erythritol or sweetener of choice I prefer the confectioners variety, but any will work
  • 1 large egg
  • 1 egg yolk
  • 4 tbsp of melted butter
  • 1/2 tsp vanilla extract
  • 1/4 cup plus 2 tbsp of almond flour
  • 2 tbsp of flax meal
  • dash of salt
  • 1/2 tsp Baking Powder

For the cheesecake filling
  • 8 oz cream cheese at room temp
  • 1/4 cup erythritol or sweetener of choice again I prefer the confectioners
  • 1 tsp vanilla
  • 1/4 cup sour cream at room temp
  • 1/4 cup Heavy Cream at room temp
  • 1 egg

Instructions
For the banana bread bottom
  1. Preheat the oven to 350F and grease a 7 or 8" springform pan with non stick spray.
  2. In a large bowl, mash the banana with a fork then add in the melted butter, egg, egg yolk, and vanilla. Stir until well combined.
